Spiced banana bread



Banana bread was one of the top googled recipes at the beginning of these crazy times.

I love a nice slice of banana bread in the morning with my coffee.

Here is my recipe for a loaf of fluffy and moist banana bread.


INGREDIENTS ( for a 24x14x6 loaf tin)


300g self-rising flour

140g raw sugar

1 tsp Herbies Spices spice tonic (or ground cinnamon)

2 eggs

50g coconut oil, melted

3/4 cup milk

2 mashed ripe bananas


METHOD


Preheat oven to 160°C fan-forced and lined the loaf pan with baking paper.


In a mixing bowl combine flour, sugar and the spice tonic.


Make a well in the centre and add the eggs, milk, and melted coconut oil, and stir until well combined.


Add the mashed bananas to the flour mixture and stir until just combined.


Spoon the mixture into the lined tin and smooth the surface.


Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean.


Remove from oven and the tin and let it cool onto a wire rack.
