Sasanelli are a traditional biscuit from Puglia, rich with cocoa, cinnamon, zest, and sweetened with vincotto.
These spiced biscuits are popular around Christmas but delicius any time of the year!
INGREDIENTS (makes 20 biscuits)
250 gr flour
150 ml vincotto
50 gr almonds, roughly chopped
Zest of 1/2 lemon
75 gr sugar
100 ml extra virgin olive oil
25 gr cacao powder
5 gr baking powder
1/4 tsp cinnamon, ground
METHOD
Preheat the oven to 180ºC and line a tray with baking paper.
In a bowl, add the vincotto and olive oil, and whisk until combined. Set aside.
In a separate bowl, add the remains ingredients and slowly add and stir in the vincotto and oil mixture a little at a time, until you have a smooth and soft mixture (finish combining the dough with your hands if needed).
With the help of a spoon, scoop some of the dough and place it in the tray. Repeat with the rest of the dough until all is scooped.
Bake for 10 minutes. Let them cool and serve.
TIP: You can replace the chopped almonds in the mixture by adding just one on top.
