Raw zucchini in agrodolce



Yes, zucchini are also amazing raw.

Thinly sliced zucchini are coated with sweet and sour dressing and topped with fresh basil.

One of the amazing things about this dish is that it can be prepared in advance.

You can leave the dressed zucchini to marinate in the fridge and when you ready just plate them and refresh them with a drizzle of olive oil, a squeeze of lemon and fresh basil leaves.


INGREDIENTS


3 zucchini

1 cup basil leaves

3 tbsp Extra-virgin olive oil

1 tbsp white balsamic vinegar

2 tsp lemon juice

1/2 tsp salt


METHOD

With a peeler or mandoline shave the zucchini on the length and place them into a salad bowl.

Torn some of the basil leaves and add them to the zucchini (make sure use save few whole basil leaves to garnish the dish).


In a small bowl, place the oil, vinegar, lemon juice and salt. Whisk them together until salt is dissolved and the ingredients well combined.


Pour the dressing over the zucchini and toss to coat.


Check for seasoning and nicely place them into a serving plate.

Garnish with some extra fresh basil leaves.
