INGREDIENTS (serve 2 pp)
1 can of tuna, drained
1/2 iceberg lettuce head, sliced
1 cucumber, sliced
1/2 cup of black olives, pitted
2 hard-boiled eggs, quartered
4-6 anchovy fillets
1/4 cup of extra virgin olive oil
2 tablespoons of red wine vinegar
Salt and pepper to taste
METHOD
In a large salad bowl, combine the tuna, lettuce, cucumber, black olives, and hard-boiled eggs.
Arrange the anchovy fillets on top of the salad.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the vinaigrette dressing.
Drizzle the dressing over the salad and toss gently to combine.
