Sorpresine or Tortellini Finti are taking social media by storm.
This pasta shape is part of what we call "cucina povera".
Back in the day, when not always was easy or possible to purchase a protein to make tortellini filling, our grand grandmas came up with this pasta shape. It reminds you of a tortellino, but with no filling.
Which inspired the name "sorpresine" - little surprises or "tortellini finti" - fake tortellini.
Here is how to shape them.
A perfectly square pasta sheet is the secret.
Use a sharp knife to cut the pasta sheet into 5cm squares.
Place the square on your finger and pinch the 2 tips of the pasta sheet that are hanging from your your finger, forming a triangle.
Pull backward the others 2 tips of the triangle and pinch them together.
Place on a floured tray, set aside and repeat with the remaining pasta sheets.
