Oranges are so good at the moment and give these olives an extra layer of flavour.
Easy to make ahead(even the day before), they are perfect served with your favourite aperitivo.
INGREDIENTS
300 gr green Sicilian olives
3 tbsp Extra virgin olive oil
2 garlic cloves, peeled and cut in half
4 thyme sprigs
3 orange peels
Juice from 1 orange
2 orange slices, cut into 1/8
METHOD
In a frying pan, over medium heat, add olive oil, garlic, orange peel and thyme.
Warm-up and cook until fragrant (about 2-3 minutes).
Add olives and sautée for 5 minutes until they are warm through.
Once the olives are warm, add the orange juice. Bring to a boil and let it reduce for 2 minutes.
Remove from the heat and pour the olives along with the cooking liquid into a serving bowl.
Allow them to cool off in the juice.
Before serving, toss through the orange pieces.
