Always loved baked veggies, and the classic Italian way is to stuff them with an aromatic bread crumb mixture. I added bocconcini to the mix to make it even yummier.
These stuffed tomatoes are a quick and tasty side dish, or they can be your main course.
Fantastic between 2 slices of toasted bread, and they taste even better the day after.

3 tomatoes
1 cup bread crumbs
2 bocconcini, cut into small pieces
Parsley leave, chopped
Salt
