Crostino alla beccafico



I’ve got the idea of this crostino after seeing this classic Sicilian dish.

Alici (anchovies) alla beccafico is a traditional Sicilian antipasto, where filleted anchovies are stuffed with dried fruit, pine nuts and breadcrumb, rolled and baked.

So I’ve picked a few of these ingredients and created this easy antipasto or a perfect snack for the aperitivo hour.


INGREDIENTS (makes 12)


12 baguette slices

12 marinated anchovies fillets

8 cherry tomatoes, diced

1 tbsp pine nuts

2 tbsp sultanas, chopped

Parsley leaves, chopped

Extra-Virgin olive oil

Salt


METHOD


Drizzle your bread slices with some olive oil on both sides, and over a grilled pan (or frying pan) lightly grill them. Set aside.


In a small bowl, place the cherry tomatoes, pine nuts, sultanas and parsley.

Season with olive oil and salt. Toss until well combined and check for seasoning.


To assemble, place some of the tomatoes mixture on the grilled bread and top it with one or two of the anchovies fillets. Repeat with the remaining slices.


Place the crostini on a serving board and garnish with a drizzle of Extra-Virgin Olive Oil.
